Now you can enjoy a whole new level of dining on The Natural Side of Ocean Shores. Executive Chef Doug Graybeal has create a special atmosphere at the new Oyhut Bay Bistro and Sidewalk Café, which opened Friday, April 14.
Chef Graybeal has a vision for providing a casual dining style, blended with handcrafted cuisine that lends easily to ocean beach lifestyle of Oyhut Bay and Ocean Shores. The Bistro surrounds guests with inviting warm earthy colors, textures and finishes. This décor reflects the natural surroundings found at the Oyhut Bay resort community. An open concept kitchen allows diners to more closely experience the personal touches as the cooks caringly prepare their meals.
The ever-evolving menu features entrees that include Seafood, Chicken, and Steak. Graybeal is creating his own Oyhut Bay Signature dishes, such as a slow smoked Brisket served with young tender fingerling potatoes and a seasonal fresh vegetable. A delicate blending of flavors will be savored in a French Onion Soup that is sure to be a year-round favorite. The chef is particularly excited about his innovative appetizer featuring a Tuna Tartare Poke with mango, avocado, and pineapple. Adding a pizza oven to his state of the art kitchen allows the creation of handmade thin crust artisan pizzas usually experienced in the finest bistros. Dessert highlights include a revolving cheesecake menu and, of course, a local comfort food favorite, Bread Pudding.
Chef Graybeal began his Northwest culinary career in 1995 at the Lake Quinault Lodge. He became well studied in showcasing dishes that featured natural, locally sourced ingredients and unique flavors only found in the NW corner of the map. After many years of exploring ways to create original and popular offerings, he was ready to move into a new era. The addition of the Bistro at Oyhut Bay creates the perfect venue for his culinary vision and long-standing reputation for excellent service.
The Oyhut Bay Bistro’s day begins with lunch and dinner service, with a fresh omelet available daily for those who wish a leisurely late breakfast. Hours are 11am-9 pm Wednesday-Sunday, year ‘round, with occasional special events.Read More

Walking Tour of the Oyhut Wildlife Recreation Area

The seaside village of Oyhut Bay is directly adjacent to the state-owned Oyhut Wildlife Recreation Area. This 683-acre reserve is set aside for wildlife and recreation activities like hunting and birdwatching, and is one of the premier birdwatching areas in the state.
Earlier this month, the Oyhut Bay team was fortunate to take a hike out into the Oyhut with local botanist, Lou Mesmer and local history buff, Tom Quigg. We learned about how the reserve and bay have changed over the years, with the salt marshes disappearing and more water being retained by ever-shifting sand dunes. We also sampled some of the edible flora of the reserve including the aptly named pickle grass.
While some informal trails exist, there are no formal trails through the reserve at this time. We are hoping to work with the Department of Fish and Wildlife to add a regularly maintained trail directly from our community at Oyhut Bay through the reserve.

Oyhut Bay - A Sneak Preview

Last weekend at Oyhut Bay, 180 groups visited as we held a quiet sneak preview for our first two model homes. This unadvertised event was invitation-only for our early interest list (plus for the lucky few who stopped by). Lunch was catered by Ocean City Roasters, with free canal tours from the Electric Boat Company.

EXCLUSIVE: Bellevue-based Anastasiou heads to Ocean Shores with $75M resort project

A Bellevue real estate firm that has built commercial projects for Microsoft and SpaceLabs has something very different teed up: a seaside village in Ocean Shores.
Anastasiou Development on Monday announced the details of the 43-acre project called Oyhut Bay, a master-planned, mixed-use development at the south end of the Ocean Shores peninsula, which is 135 miles southwest of Seattle in Grays Harbor County.
Designed to be a walkable community, Oyhut Bay will have more than 200 cabins; restaurant and retail space. A 36-unit condo project that a previous developer built has already been completed there.
The launch of project is a sign that the second-home market is picking up again.
Stavros Anastasiou, an immigrant from Greece, and his wife Colleen Anastasiou, had built 3 million square feet of commercial projects in the Puget Sound area before the Great Recession.
“After the market collapsed, we all took a sabbatical,” Stavros Anastasiou said, explaining how it was around this time he learned about another resort community, the acclaimed Seabrook, about 30 miles north of Ocean Shores.
A bank had foreclosed on the previous owner of the Oyhut Bay property.
“We cut a deal and the price was right,” Stavros Anastasiou said, adding he and his partners on the venture, Jeff Foushee and Loch Anderson, the former owners of Foushee & Associates construction company, acquired the 43-acre property for $1.6 million in early 2013.
Anastasiou hired Qamar Town Planning of Portland, to design Oyhut Bay. Anastasiou Development’s vision is to end up with a project that looks like a traditional neighborhood with touches of a European village and turn-of-the-century American small town. Oyhut Bay is a similar concept to Seabrook but will be developed “a little differently,” Stavros Anastasiou said, explaining that his project is going up in an already developed area with the existing town of Ocean Shores around it.
Stavros Anastasiou estimates the Oyhut Village will cost a total of $75 million to develop, and said the project will be built in four to five phases, with sales for the first phase starting in July.
In addition to Qamar Town Planning, Structura Naturalis Inc., is working on the project along with Nash & Associates, a Kirkland firm that’s designing the cottages. The Oyhut Village general contractor is Brunstad Construction of Ocean Shores.Read More
